Description
The Santa Barbara County Probation Department is accepting applications for Cook- EXTRA HELP. This position is utilized in an on-call, as needed basis.
Under general supervision, coordinates and participates in preparing, cooking, and serving food to large groups of people in an institutional setting; does varied cooking and prepares special diet foods; and, performs related duties as required.
DISTINGUISHING CHARACTERISTICS: The Cook is distinguished from Cook - Sheriff’s Institutions in that the latter coordinates the preparation, cooking and serving of meals in a central jail kitchen and performs minimal hands-on cooking tasks.Under general supervision, coordinates and participates in preparing, cooking, and serving food to large groups of people in an institutional setting; does varied cooking and prepares special diet foods; and, performs related duties as required.Examples of Duties
- Reads menu to estimate food requirements and procures food from storage; takes count of meals served and utensils used in serving food; notes and requests needed supplies;
- Adjusts controls to regulate temperature of ovens, broilers and grills to cook food; measures and mixes ingredients according to recipe; using a variety of kitchen utensils and equipment, prepares meats, fish, vegetables, fruits and other foods; cuts, trims and bones meats prior to cooking and bakes breads, rolls, cakes and pastries; presents main dishes, salads and desserts in an attractive manner;
- Trains and leads the work of small numbers of employees or juveniles; enforces security measures and reports disciplinary problems and/or takes disciplinary measures as necessary.
- Reads menu to estimate food requirements and procures food from storage; takes count of meals served and utensils used in serving food; notes and requests needed supplies;
Employment Standards
- One year of experience in cooking and preparing meals in large quantities; or,
- one year of experience performing duties equivalent to the class of Food Services Worker with Santa Barbara County; or,
- a combination of training, education, and experience that is equivalent to one of the employment standards listed above and that provides the required knowledge and abilities.
Knowledge of: the methods and procedures of quantity food preparation; kitchen sanitation and safe food storage; use and care of cooking equipment and utensils; kitchen safety.
Ability to: prepare quantities of food required with a minimum of waste; organize and prioritize work assignments; make routine arithmetic computations; prepare and serve food in an allotted time and on schedule; safely store and hold food; maintain good working relationships; direct the work of others; understand and follow written and oral instructions; prepare tasty food, and serve it attractively; maintain kitchen, dining area, kitchen utensils and equipment in a sanitary manner.
Background Check: Employees assigned to positions in the Probation Department are required to pass a background investigation.- One year of experience in cooking and preparing meals in large quantities; or,
Supplemental Information
Incumbents may be required to lift objects weighing up to 100 pounds. Incumbents must be willing and have the ability to accept shift work.
The background process will include:

· Polygraph examination

· Use of any controlled substances within specified time frames depending on the drug.
· Any felony convictions
· Convicted for any sex offense with a victim.
· Conviction with elements of violence within the past five (5) years.
· Conviction for crimes against property within the past five (5) years.
· Felony conviction reduced to a misdemeanor within the past five (5) years.
· Evidence of alcohol or substance abuse dependency within the past 24 months which demonstrates impairment must be accompanied by a minimum of 24 months sobriety.
· Presently on probation (formal or informal).
