SUMMARY

This position is also eligible for tips.

Under general supervision, this position is responsible for the day-to-day preparation and service of the food and/or beverages at Thorncreek Golf Course. Oversees operation of the kitchen when management is not present.  Works with management to develop menu items, and to train and schedule staff. 

ESSENTIAL FUNCTIONS

Provides excellent customer service to customers and members of the golf course facilities. Leads by example. Acts in a professional and courteous manner at all times. Works with all food and beverage staff, as well as other golf operations and maintenance staff, to ensure the highest level of member and guest satisfaction.

Leads team while cooking and preparing all foods for Thorncreek Golf Course using established recipes. Helps to develop these recipes and procedures with the assistance of management. Prepares daily specials and special events foods as needed. Prepares menu items to order to include breakfast, lunch or dinner.  Operates ovens, stoves, grills, microwaves, fryers, etc. Ensures correctness of the temperature of appliances and food. Maintains portion control for all foods served. Controls spoilage and waste. Responsible for the quality control and presentation of all foods served. Maintains sanitary health practices around the preparation of food. Keeps equipment, kitchen, food prep areas, counters, stoves, ovens, coolers, and freezers clean. Properly rotates all foods in stock, coolers, and freezers. Adheres to all Public Health Regulations.
 
Provides timely food and beverage service to guests including, but not limited to, distributing menus, making menu recommendations, taking food and beverage orders, submitting orders to kitchen, preparing or mixing both non-alcoholic and alcoholic beverages, placing food and beverages on trays, adding garnishes or other appropriate ingredients, delivering and serving orders. Keeps bar area stocked appropriately with beer, liquor, cups and lids, ice etc., and in clean and good working order. Removes soiled dishes from tables. Itemizes bills correctly and efficiently secures payment.
 
Washes dishes. Cleans up tables, bar counters, vacuums the dining room area and sweeps/mops the kitchen.

Prepares weekly inventory list for the management. Maintains and adjusts inventory-ordering sheets when changes to the menu occur.  Does daily inventory of all products, both food and beverage, in order to inform staff to maintain proper service levels.  Maintains and updates proper par levels, and provides input on add/subtract of items for sale. Assists in developing menu items and works with management on establishing portion control, food costs, and menu costs for these items. Assists with deliveries (received, stocked, and rotated). Reports hazards and maintenance needs for the kitchen to the appropriate personnel. Assists management with producing and following up on a cleaning schedule for all areas of the kitchen.

Works special events and banquets. May be required to take the lead in a group setting, or during an event. This includes, but is not limited to, talking to customers and helping management create pricing, taking orders, creating menus and recipes, supervising events to include event staff, and charging customers for event.

Attends regular meetings with management.
 
May be required to work overtime, weekends, and holidays.
 
Observes and enforces all local, state, and federal liquor laws. Protects course and city from liability and image with regard to serving intoxicated persons. Notifies proper staff when issues occur.

Performs other duties as assigned.

QUALIFICATIONS

Education/Experience:
High school diploma or GED. One year of previous food service experience including prior experience in food preparation preferred. Kitchen Management or Lead Cook experience preferred.  Some knowledge of golf is preferred. Additional schooling or training in food service and preparation highly desirable.  Equivalent combinations of education and experience may be considered.

Licensing/Certification Requirements:
Valid Colorado driver's license with a safe driving record.  City of Thornton Liquor Training must be obtained at the first available opportunity.  Serve Safe certification required as soon as possible.
