The County of El Dorado is conducting this recruitment to establish a list, for up to three (3) months, which may be used to fill future full-time, part-time and extra-help vacancies in the Probation and Sheriff's department in both Placerville and South Lake Tahoe.  Current vacancies are four (4) extra help located in South Lake Tahoe and four (4) extra help located in Placerville for the Probation Department and one (1) extra help in either Placerville or South Lake Taohe for the Sheriff's Office.

DEFINITION
Under general supervision, oversees inmates, detainees and inmate workers and personally participates in the preparation, volume cooking and portioning of meals in the County Jail or Juvenile Facility.

DISTINGUISHING CHARACTERISTICS
This skilled, working level class ensures that nutritional, properly prepared meals are produced in a large volume, institutional setting on an assigned shift. Responsibilities include overseeing inmates, detainees and inmate workers assisting with food preparation. This class is distinguished from Correctional Food Services Supervisor in that the latter is the first full supervisory level. It is further distinguished from Cook by its emphasis on a correctional setting.

Examples of Essential Functions

  • Supervises inmates, detainees and inmate workers and personally participates in the preparation, cooking and portioning of meals on an assigned shift.
  • Plans meals following established guidelines and orders required food items.
  • Prepares and oversees the preparation of a full range of meals, including special diets.
  • Directs the portioning of food for distribution to the inmate/detainee population.
  • Ensures that food preparation equipment, cooking and serving utensils, kitchen work areas and the dining area are orderly, clean and sanitary.
  • Uses, cleans, adjusts and performs minor maintenance to a variety of large institutional cooking equipment.
  • Stores leftover food appropriately, inventories and maintains stocks of food and supplies; receives food and supplies, unpacks and stores food in the appropriate location.
  • Instructs inmates/detainees in the techniques of food preparation, cooking and portioning, safe work procedures, and the use and minor maintenance of institutional cooking equipment.
  • Maintains records of food and supplies used, meals served, etc.; prepares periodic and special reports as required.
  • Monitors and maintains the security of facilities and equipment.
  • Attendance and punctuality that is observant of scheduled hours on a regular basis.
  • Performs other duties as assigned.

Education & Experience Requirements (typing "See Resume" in application will not be accepted)

Experience:
Two (2) years of experience in the institutional or commercial food industry.

Other Requirements:
Possession of a ServSafe Food Handler Certificate within three (3) month of hire.
Must pass a detailed background investigation.

Knowledge of:
  • Principles, methods and equipment used in high volume meal preparation.
  • Safe work practices and sanitation related to food preparation and service.
  • Basic business arithmetic.
  • Basic inventory and record keeping principles.
Skill in:
  • Operating and cleaning large food preparation and cooking equipment.
Ability to:
  • Plan, oversee and prepare meals in a large scale setting.
  • Oversee and prioritize the work of others.
  • Maintain accurate records and preparing work related reports. Instructing others in work procedures.
  • Make accurate arithmetic calculations.
  • Read, understand and follow recipes and oral and written directions.
  • Establish and maintain effective working relationships with those contacted in the course of the work.
  • Maintain security of facilities and equipment.

Environment: Work is primarily performed indoors in a food preparation facility within a County Jail or a Juvenile Institution setting; assignments may be comprised of non-standard hours, weekends and holidays.

Physical: Primary functions require sufficient physical ability to work in an office setting and operate office equipment; vision in the normal visual range with or without correction sufficient to read computer screens and printed documents and to operate equipment; hear in the normal audio range with or without correction. Frequent standing; wrist and arm motions and upward/downward flexion of neck; fine finger dexterity of both hands, ability to grasp and hold; lifting, carrying or pushing objects that weigh up to 15 lbs. Occasional sitting and bending, walking and reaching; lifting, carrying or pushing objects that weigh 16 - 40 lbs. Infrequent climbing; lifting, carrying or pushing objects that weigh more than 40 lbs.
